Cooking Retreat Theme:
Join Heathar for a 3-day cooking retreat and learn how to make Italian classics, including homemade sauce, traditional meatballs, baked salmon with tapenade, as well as Italian antipasti (think Italian-style appetizers that include trays of cured meats, cheeses from our farm and from rustic Italian farms, fried anchovies, and heaps of olives).
Of course, the meals will not be complete without some traditional Italian sweetness (dolce)… a truly Italian meal isn’t complete without tiramisu, gelato, and crème brûlée (however French it is, we will still relish in this creamy dessert).
Attendees can choose to enjoy organic and biodynamic wine and digestive bitters with their meals. This, of course, is entirely optional.
Please note that all meals will be gluten-free, soy-free, and grain-free. Yes, that sadly means there won’t be any pasta. But, rest assured, pasta is just one tiny bit of the Italian food culture, and you will have a full-on Italian cooking experience in Heathar’s kitchen (don’t forget, she is Sicilian afterall).

Day One
Antipasti
In Italy, appetizers aren’t just a filler before your meal; they’re a full-on gastronomic experience.
Appetizers are a rich culinary experience always paired with appertivo —low-alcohol beverages steeped in herbs such as eucalyptus, licorice, and anise—that are known to open the stomach and prepare it for feasting.
Heathar will teach you how to make:
Anchovies fried in lard
Tonnato with seasonal veggies
An authentic Italian-style Charcuterie board
Homemade ricotta

Day Two Italian Classics
Get ready for a full mentorship in seasonal, intuitive classic Italian cooking — recipes that you will be able to transport back to your kitchen.
This is a feast day, come hungry, and always come with some Italian juice. On day two, Heathar will teach you how to make:
Italian Sauce (her mom’s Sicilian secret recipe)
Meatballs teeming with pork, beef, and herbs
Authentic Caesar Salad
Tarimasu

Day Three
Seafood
No one does seafood better than Sicilians. Flaky fish, rustic tomato and garlic sauce, seafood salad and an olive oil gelato to end the meal with a bang.

Baked salmon with roasted tomatoes, feta and olive tapenade
Insalata di Mare (Italian seafood salad)
Olive oil gelato

Participants will be required to book their own hotel or Airbnb. Please do not book until we talk, so I can give you tips on the best places to stay.
